Choosing the right cookware
The most important thing when choosing cookware is picking the right material for your needs, type of material determines how evenly the heat is distributed which directly influences the taste of the food.
Comparing cookware based on material
· Copper: One of the major benefits of Copper is that it’s very good at distributing and retaining heat. However the prices can go up as this material is very expensive and not very common as others. Often you’ll find cookware that’s made out of mixing Copper with other metals in which copper is present in some thin layer or in base where we can take the maximum advantage of its conductivity. Only problem with copper is that it can easily darken and dent so you must take this as well into consideration when buying such cookware.
· Aluminium: This is probably the fastest and most sensitive material as far as temperature goes. It will cool off very quickly but will also heat up fast with well distribution, other benefits of aluminium cookware are lighter weight and durability. Problems that occur with aluminium cookware are that it can react with certain high acidic foods and that’s why on the market you’ll often find that it’s coated with stainless steel or some other material.
· Cast Iron: You’ll find that pans made out of cast iron are often the heaviest and most durable of all. This material is great for distributing heat and will make sure your food is evenly cooked. Cookware made from cast iron is often used when food needs longer cooking foods like soups, chowder and stews.
· Anodized Aluminium: Anodizing is a process to make aluminium less reactive, immune to scratching and less sticky. Anodized Aluminium is very popular in modern cookware and is extremely strong and durable.
· Stainless Steel: This material is kind of a compromise of every other. With characteristics like: moderate price, great heat distribution, durability and non-reactiveness it’s very hard to find a home which doesn’t have at least some stainless steel cookware. To increase its conductivity stainless steel is often mixed with other material, typically aluminium in between layers.
