Jerusalem Artichoke is enjoying something of a big revival, thanks to its delicious and distinctive flavour. Use them as potatoes or other root vegetables, for mashing, roasting, chipping & sauteing. Also lovely with salads.An easy plant to grow, which is a relative of the sunflower and so grows very tall (up to 2 metres). It should therefore be grown at the edge of any plot, and makes an excellent windbreak! Plant in spring, harvest Oct-March. Tubers store well in the ground, so no need to lift them all at once.
